Chickpea Tacos – Whole Foods Recipe

 

My friend Carrie has been kind enough to share these wonderful Whole Foods Recipes with us.

Ingredients:

2 cups or 1 can chickpeas, drained
2 cups salad greens
1/2 cup organic sour cream
1 avocado, chopped
fresh cilantro to taste
1 cup salsa
juice of one lime
one clove garlic
corn taco shells

Instructions:

Place avocado in bowl and mash. Add chickpeas, cilantro, garlic and lime juice. Add sea salt, cumin and pepper to taste.

Fill taco shells with chickpea mash, top with greens and sour cream and salsa.

Healthy Recipe – Diana’s Favorite Oat Burgers

HEALTHY VEGETARIAN RECIPE — DIANA’S FAVORITE OAT BURGERS (Oatmeal and Cottage Cheese Patties)

Ingredients – best if you can use organic eggs and oatmeal.  You can see the difference in the eggs in my photos.

1 cup 2% creamed cottage cheese
1 cup raw oatmeal
1 cup bread crumbs (use fresh, sprouted grain bread – I use Silver Hills Bread)

Oat Burgers Healthy Vegetarian Recipe by Diana Walker

3 eggs
1 medium onion
2 garlic cloves
1 tsp poultry seasoning
1 tsp dill
1 tsp garlic & herbs seasoning

In blender
Blend 3 eggs, add 1/2 the onion, the 2 garlic cloves, along with poultry seasoning, dill and garlic & herbs seasoning.

 

In bowl:
Mix together cottage cheese, oatmeal, and bread crumbs.

Add blended egg mixture. (preferably organic free-range eggs)

Add 1/2 onion, chopped finely.

Form into patties. (Oatmeal and Cottage Cheese Patties or Burgers)

Brown lightly on both sides, in olive oil.

The Oat Burgers taste great like this, but I frequently then put the patties into a casserole dish, and add a can of mushroom soup, mixed with 1/2 cup of water. Place in oven for 15 minutes.

Note, doubling the recipe works fine too).

Raw foods are becoming more and more popular for weight management.

You could start your day like this (this is my son’s invention for a morning drink):

Gabe’s Vegetable Green Drink Recipe

Whiz up in the blender, the following
Celery, 6 inches
Cucumber, 6 inches
1 Carrot, 8 inches
1 Tomato, medium
Add distilled or purified water, about 1 cup
Blend – well it does look more red/orange because it is not all green!
Drink!
You will grow accustomed to it, if you don’t immediately love it – and you know you’ve already had lots of vegetables to start your day.

Dr. Oz on Oprah has a Green Drink Recipe (my son invented his 4 years ago)…

As featured on Oprah, here are the ingredients for the Dr. Oz Green Drink Recipe:

2 apples, cored
2 big handfuls of spinach
half cup chopped parsley
1 celery stick, chopped
1 inch length of ginger root, peeled
1 lemon – juice only
1 medium cucumber
Place ingredients in a blender, add 4 ounces of spring water, or a handful of ice cubes, then puree quickly for one minute. Makes 2 glasses of Dr. Oz’s green drink.

Drinking either of these green drinks will help to reduce cravings for junk food, sugar, and processed foods by providing power packed nutrition, which means your body is not always hungry and searching for something else to fill it.

The raw foods and power packed nutrition can lead to weight management and weight loss.
